About the Sommelier
With 34 years in the Hospitality Industry comes a wealth of knowledge.
With more Industry qualifications than most and the will to use them, Nicholas is able to deliver the complete package when it comes to Sommelier Services.
Nicholas A Bayne FBII has been a ‘Fellow’ of the ‘British Institute of Innkeeping’ since 1993 and actively practices the tenets of the organisation in everything he does within Hospitality.
He is one of the few Sommeliers to achieve 100% score ‘Distinctions’ in both WSET 2 and WSET 3 which is no mean feat (the pass rate being 60% for a ‘pass’).
To supplement his qualifications Nicholas has spent several years studying wine ‘hands on’ by camping through Europe, focusing on Winemaking, Terroir, Farming Techniques and the wine community.
His main area of interest is the community connection to wine agriculture, celebrating great Terroir through wine making and that financial gain through wine making contributes to the local economy rather than a large corporate entity.
Nicholas spent many years with ‘Laymont & Shaw’ in Truro, Cornwall - the first Spanish Wine Specialist in the UK (founded 1973). He was the retail & warehouse manager. During this time he became skilled in wine tasting events, including product representation for ‘Valdivia’ and ‘Juve y Camps’ at ‘The Vinters Hall’, London. He also honed his management of fine wines in their cellars and applies these practices with every cellar he manages.
Specialisation includes Italian regionality, Sherry, Spanish wines and English winemaking.
He has been fortunate to spend time at ‘Mastroberardino’, Camel Valley’ and the Palazzo of Montepulciano. Austrian & Germanic wine growing is another area Nicholas pays attention to with German wine law being a personal interest.
He is also knowledgeable in all European wines, Terroir, culture and winemaking processes, including hot climate winemaking.
